This bulgur with mix dish comes together in less than 30 minutes — quick, colorful, and full of flavor!
Ingredients
- ¼ cup oil
- 1 chopped onion
- ½ cup sun-dried tomatoes (or fresh tomatoes, optional)
- 1 cup diced mixed bell peppers
- 2½ cups whole-grain bulgur, washed only (not soaked)
- 1 tsp black pepper
- 1 tsp ground coriander
- 1 tsp paprika
- 1 tsp dried thyme
- 2 tsp salt
- 1 tsp turmeric
- 2½ cups water
Directions
- In a Pyrex granite pot, sauté the chopped onion in oil, then add the sun-dried tomatoes. You can also use fresh diced tomatoes if you prefer.
- Add the mixed bell peppers and stir well.
- Add the washed bulgur (whole grain) directly to the mixture along with all the spices.
- Pour in the same amount of water as bulgur — one cup of water for every cup of bulgur — and let it cook.
- Separately, sauté chicken with onion and bell pepper, add spices and a spoon of mustard.
- Once the bulgur absorbs the water (it takes about 20 minutes), fluff it up and transfer it to a Pyrex serving dish.
- Top the bulgur with the chicken mixture, a sprinkle of parsley, and some nuts.
This bulgur comes out perfectly fluffy with a rich, aromatic flavor that’s simply delicious.
Tip: As long as you don’t soak the bulgur before cooking, it won’t get mushy!
