Bulgur with Mix

This bulgur with mix dish comes together in less than 30 minutes — quick, colorful, and full of flavor!

Ingredients

  1. ¼ cup oil
  2. 1 chopped onion
  3. ½ cup sun-dried tomatoes (or fresh tomatoes, optional)
  4. 1 cup diced mixed bell peppers
  5. 2½ cups whole-grain bulgur, washed only (not soaked)
  6. 1 tsp black pepper
  7. 1 tsp ground coriander
  8. 1 tsp paprika
  9. 1 tsp dried thyme
  10. 2 tsp salt
  11. 1 tsp turmeric
  12. 2½ cups water

Directions

  1. In a Pyrex granite pot, sauté the chopped onion in oil, then add the sun-dried tomatoes. You can also use fresh diced tomatoes if you prefer.
  2. Add the mixed bell peppers and stir well.
  3. Add the washed bulgur (whole grain) directly to the mixture along with all the spices.
  4. Pour in the same amount of water as bulgur — one cup of water for every cup of bulgur — and let it cook.
  5. Separately, sauté chicken with onion and bell pepper, add spices and a spoon of mustard.
  6. Once the bulgur absorbs the water (it takes about 20 minutes), fluff it up and transfer it to a Pyrex serving dish.
  7. Top the bulgur with the chicken mixture, a sprinkle of parsley, and some nuts.

This bulgur comes out perfectly fluffy with a rich, aromatic flavor that’s simply delicious.

Tip: As long as you don’t soak the bulgur before cooking, it won’t get mushy!
